Spanish-Style Fish in Olive Oil

Ingredients:
  • 500g Himalit (Flying Fish)
  • 1 cup olive oil (or corn/coconut oil)
  • 1 medium carrot, peeled and sliced
  • 3 tablespoons green olives
  • 2 tablespoons pickles
  • 2 dried bay leaves
  • 1 teaspoon salt
  • 1 bulb garlic
  • ¼ cup water
  • 2 teaspoons oyster sauce (optional)
  • 2-3 pieces red chilies
  • 500 ml water

Instructions:
  1. In a large bowl, combine 500 ml of water and 1 teaspoon of salt. Add the Himalit slices and let them soak in the brine for 30 minutes. Meanwhile, peel and slice the carrot.
  2. In a pressure cooker, place a layer of sliced carrots, bay leaves, garlic, and whole peppercorns at the bottom. Add the first layer of Himalit on top.
  3. Add another layer of seasonings and Himalit. Top with green olives, pickles, and red chilies. Optionally, add oyster sauce.
  4. Sprinkle the remaining salt over the top.
  5. Pour the olive oil over the mixture until covered, followed by ¼ cup of water. Seal the pressure cooker and heat until it whistles. Once it does, lower the heat and cook for 1 hour.
  6. Once done, release the pressure before opening. Serve on a plate and serve it hot!
