- 500g Himalit (Flying Fish)
- 1 cup olive oil (or corn/coconut oil)
- 1 medium carrot, peeled and sliced
- 3 tablespoons green olives
- 2 tablespoons pickles
- 2 dried bay leaves
- 1 teaspoon salt
- 1 bulb garlic
- ¼ cup water
- 2 teaspoons oyster sauce (optional)
- 2-3 pieces red chilies
- 500 ml water
Instructions:
- In a large bowl, combine 500 ml of water and 1 teaspoon of salt. Add the Himalit slices and let them soak in the brine for 30 minutes. Meanwhile, peel and slice the carrot.
- In a pressure cooker, place a layer of sliced carrots, bay leaves, garlic, and whole peppercorns at the bottom. Add the first layer of Himalit on top.
- Add another layer of seasonings and Himalit. Top with green olives, pickles, and red chilies. Optionally, add oyster sauce.
- Sprinkle the remaining salt over the top.
- Pour the olive oil over the mixture until covered, followed by ¼ cup of water. Seal the pressure cooker and heat until it whistles. Once it does, lower the heat and cook for 1 hour.
- Once done, release the pressure before opening. Serve on a plate and serve it hot!
