Inihaw na Pusit

 FISH/CUT: Pusit Lumot

 

Instructions:

1. Slice the tomatoes, chop some onions, then mix well in a bowl.

2. Squeeze lemon juice in the mixture.

3. Gently stuff the squid (lumot; cleaned and deinked). Then season with salt and pepper.

4. Score the stuffed squid slightly.

5. Preheat the pan and brush with annatto oil. You may also cook the squid on the grill.

6. Brush the squid with more annatto oil.

7. Use a torch gun to char the squid. Repeat brushing and torching until the squid is cooked.

8. Plate the squid and garnish with more stuffing and sauce to your plate.
